Message cautious to take the first offer from the insurance company. Unless you have a policy limit, such as a classic car policy limited to $5k. Then you get the limit. Otherwise, rule of thumb- If it seems low, it is. Keep all receipts for upgrades and improvements. If you do not have receipts, find ads w/ prices for the parts. Also, look for prices at which dealers, not private sells, are selling similar cars. Blue book price is not dispositive, but market price is. So, the argument can be made for replacement value, not bluebook, especially given the z's collector status. Insurance companies do not want to fight you, especially when they hear lawsuit. It's all about risk management for them, i.e. damage control and paying claims out low. Don't be afraid to talk to them more than four times. Good job!
